These are a few of our go-to fresh spring recipes lately — nothing fancy, just real food that works for real life.
🥕 Sweet & Creamy Carrot Salad
This one is bright, simple, and comes together in minutes. It’s one of those recipes that disappears fast at gatherings.
Ingredients:
- 4 cups shredded carrots
- 1 cup raisins
- 1 cup mayonnaise
- 3/4 cup white sugar
- 1/4 cup orange juice
Directions:
Mix everything together until well combined. Chill before serving for the best flavor.
🥚 Classic Deviled Eggs
A spring staple. These never last long in our house.
Ingredients:
- 10 boiled eggs, halved
- 1/3 cup mayonnaise
- Dash of salt or garlic salt
- 2 tablespoons mustard
- 1/4 cup sweet relish
- Paprika (for topping)
Directions:
Remove yolks and mix with mayo, mustard, relish, and seasoning. Spoon or pipe back into egg whites and sprinkle with paprika.
🥬 Celery & Cream Cheese
Sometimes the simplest things are the best.
Ingredients:
- Celery
- Cream cheese
Directions:
Spread cream cheese into celery sticks. That’s it. Crunchy, fresh, and always a hit.
🍬 Rice Krispy Treats with a Spring Twist
Soft, crunchy, and just a little touch of extra fun.
Ingredients:
- 4 tablespoons butter
- 6 cups marshmallows
- Splash of vanilla
- 1 cup melted white chocolate
- Sprinkles (optional)
Directions:
Melt butter and marshmallows together, stir in vanilla, then mix with cereal. Press into a pan, drizzle with white chocolate, and top with sprinkles if you want to make them extra festive.
🥕 The Best Carrot Cake (Family Favorite)
This one feels like light renewal in a cake. It’s soft, rich, and full of flavor and texture.
Ingredients:
- 2 cups pecans
- 1 1/2 cups brown sugar
- 1/2 cup white sugar
- 1 cup melted butter
- 4 eggs
- 3/4 cup applesauce
- Splash of vanilla
- 2 1/2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1 cup raisins
- 2 cups shredded carrots
Directions:
Mix wet ingredients, then add dry ingredients and spices. Fold in carrots, raisins, and pecans. Bake at 350°F until done (about 35–45 minutes depending on pan).
🍰 Cream Cheese Icing
The finishing touch that makes it all come together.
Ingredients:
- 16 oz cream cheese (softened)
- 1/2 cup butter
- 4 cups powdered sugar
- Sploosh of vanilla
- Pinch of salt
Directions:
Beat everything together until smooth and creamy. Spread over cooled cake.
